During the week when time is more limited I enjoy making quick little low carb meals. I have quite a few favourites and this coconut bread is up there on the list!  It's so quick and easy, and tastes good too!  If you wanted a savoury as opposed to sweet edge you could add a little finely chopped spring onion or even a little sharp cheddar.  Have fun with this recipe, its so versatile :)

Mashed turnips is a great comfort food and also a good substitute for potatoes for those trying to keep their carb intake low.  It is also very versatile and marries well with things like finely chopped sauteed spring onion, chives, or even crispy bacon bits.  Even the most fussiest of eaters will find it hard to believe that turnips can taste so good!

Mulligatawny soup is a very flavorsome soup originating from India.  Translated from Tamil it literally means pepper water.  I was introduced to this soup by my mom in law.  She makes this soup so beautifully and I love the infusion of flavours and enjoy the combination of tanginess and sweetness.  This is so good on a cold winters day!

Our tomatoe plants were full of green tomatoes and I kept on thinking how beautiful they looked and it got me thinking how great it would be to try cooking them but how?  Then I thought of the famous American dish and a movie with the same title.  After doing a little online research I was all fired up to try this recipe.  This was a brand new gastronomic experience for me and I absolutely loved this dish as well as the "tart" tangy taste.

Traditionally tuna melts are served as thick slices of toasted bread with a tuna and cheese filling, with chips on the side.  These tuna melts however have no bread and they are low carb.   You have all the taste, goodness and gooeyness without the guilt!

Many low carbers love their bulletproof coffee, and rightly so, one mug can keep a person going for 6 hours or more before you need to eat again.  The benefit of having bulletproof coffee at breakfast time is that it programs your body to burn fat all day long. David Asprey aka The Bulletproof Executive, learned about the power of butter at 18,000 feet elevation near Mt. Kailash in Tibet when he staggered into a guest house from the -10 degree weather and was literally rejuvenated by a creamy cup of yak butter tea. I know that there are low carbers out there who seldomly drink coffee and would like the same blend but replacing coffee with a good substitute.  I looked at one or two recipes online, then tweaked them to my liking. Hope you like my recipe!  This is perfect for those cold winter days!
